Default 12V vs 110V Heat

I have noticed that some trailer unit manufactures use a generator to power a 110V burner on their hot PW's. I had a Rhino hotbox years ago (now made by shark) that would loose its igniter transformer if I used a genny or extension cord. I suppose my question is why 110V as opposed to 12V that would require 1 less piece of equipment on a mobile setup.
