Default Sodium Hydroxide help

I currently use chems from Etowah chemicals. They are local and it’s the first place I went to. Their product works ok but after reading all the info here I’m beginning to wonder. Sodium hydroxide seems to be the ingredient used in most if not all hood degreasers I’ve found on the net. So as suggested here why not just use the main ingredient? My problem is I’m having a hard time finding a distributor here in Atlanta. I’m sure they are here I’m just not searching correctly. Could someone point me in the right direction? I’ve talked to a few companies but they sell their own formulation, not just sodium hydroxide.

A couple of other questions. Sodium hydroxide attacks aluminum, at the recommended mix of 2 LBS to 5 gallons of water does it not affect the exhaust fan shrouds? Lastly, what do you use as a surfactant? I’ve heard baking soda mentioned any others? Would soap work?

Thanks in advanced for any help; this place is a wealth of information.
